Blueberry Dumpling Cobbler

Blueberries are such as simple thing to have on hand that have a variety of simple, time saving recipes. I came across the recipe when I was looking for something else to make with blueberries besides my old standards. The original recipe called for something quite different but when I mixed it up I didn't have one ingredient and totally left out another by mistake. Lesson learned? Sometimes mistakes are a good thing and in this case it turned out very delicious.
Blueberry Dumpling Cobbler (8x8 baking dish)
Berry mixture:
2 c. blueberries
1/2 c. plus 5 t. granulated sugar
2 T. butter, softened
Dumpling mixture:
12 oz cream cheese, softened
1/3 c. sugar
1 1/2 c. Bisquick baking mix
1 T. lemon juice
Bring blueberries, 1/2c. + 5 tsp sugar, and butter to a boil in a sauce pan over medium heat, stirring gently until butter is melted and sugar dissolves. Remove from heat.
Beat cream cheese, 1/3 c. sugar, and lemon juice with a mixer until fluffly. By hand stir in Bisquick.
Spread two-thirds of dumpling mixture onto the bottom of a lightly greased 8x8 baking dish. Spoon blueberry mixture evenly over dumpling mixture. Then dollop remaining dumpling mixture over the blueberry layer.
Bake in 350 degree oven for 35 minutes. Good served by itself but even better with homemade whipping cream or ice cream.
