Grilled Buttermilk Banana Bread

Several years ago we stayed at a hotel that made a fabulous grilled banana bread. I fell in love with it and tried to find their recipe with no luck. I then came across this recipe that originally did not include grilling. It is very yummy!
Grilled Buttermilk Banana Bread (makes one large loaf)
½ c. butter, softened
1 ½ c sugar
2 eggs
1 cup mashed bananas (about 2 large bananas)
4 T. buttermilk
½ t. vanilla
1 ¾ c. flour
1 t. baking powder
¼ t. salt
1/8 t. baking soda
Grease and flour 1 large loaf pan (9 ¼ x 5 ¼ inch)
In mixer cream butter and sugar together. Add eggs, bananas, buttermilk, and vanilla until the batter is well mixed. Add in the flour, baking powder, salt, and soda. Mix until will combined.
Pour batter into prepared pan and bake at 350 degrees for 60 minutes or until a toothpick comes out clean.
Allow to cool and remove from pan.
Cut thick slices of bread, butter both sides, and place in a frying pan over medium heat. Grill both sides until golden brown. Serve immediately.
Additional Notes:
Best if you don’t slice it until the next day as it will be much firmer and easier to grill.
Banana bread will have more flavor the riper the bananas are.
You can also use ripe bananas that were previously frozen. Make sure you thaw them and drain any liquid that seeps out before mashing them.
