Oreo Cake Balls

My friend Kim was kind enough to steer me in the right direction on a recipe for these. Even though they are simple, I managed to do something crazy with the white chocolate in which I couldn't get it to melt properly and coating the balls was a disaster. She came over to help bake this time and the picture is the result of our efforts.

Oreo Cake Balls (makes about 2 dozen)

36 oreos (original)

8 oz cream cheese, softened

16 oz white chocolate (We used Ghirardelli chocolate white melting wafers)

Sprinkles

Place oreos in a food processor and pulse until finely ground. If you don't have a food processor you can place them in a bag and crush them with a rolling pin.

Add cream cheese and pulse until the mixture is well combined or place in mixing bowl and mix with oreos.

Roll mix into balls 1 inch in diameter. Place the cookie balls in the freezer until well chilled.

Melt chocolate in microwave bowl (we used a glass bowl) right before removing balls from freezer. Best to melt chocolate 30 seconds to 1 minute at a time; stirring before microwaving again.

Remove balls from freezer and dip in melted chocolate. Place on cookie sheet and immediately decorate with sprinkles. Allow balls to set. Store in an airtight container in refrigerator or freezer. Storing refrigerated helps keep chocolate from getting too soft.
