This recipe came from the back of a bag of C&H Sugar when we lived in Hawaii and I have been making them ever since. A few years ago I made a double batch at Christmas and had them displayed really nice on a platter. I had to run to the store for a couple items and when I came back the plate was completely empty. Ontario the Husky had eaten them all!
Macadamia Nut Cheesecake Bars
1/3 c. sugar
1 c. flour
1/3 c. butter
1/2 cup macadamia nuts, chopped
1 egg
1 pkg (8 oz) cream cheese, softened
1/4 c. sugar
3 T. milk
1 T. lemon juice
1/2 t. vanilla
Preheat oven to 350 degrees.
In bowl combine 1/3 c. sugar and flour. Using pastry blender cut butter into sugar mixture until crumbly. Stir in nuts. Reserve 1 cup of mixture for topping. Press remainder into 8x8 pan. Bake for 12-15 minutes or until lightly browned.
In same bowl combine remaining ingredients. Beat until smooth. Spread over crust. Sprinkle with reserved crumb mixture.
Bake 25-30 minutes. Cool; cut into bars. Refrigerate.
